Allium schoenoprasum

Chives are a perennial herb of the onion family, grown for their slender hollow stalks. Ours are cut by hand to keep stalk length uniform and to avoid bruising, which is what determines how well the product holds after harvest.

Culinary use

Chives have a mild onion flavour and are used as a finishing herb — on soups, potatoes, egg dishes, dips and salads. Heat destroys the flavour, so they are added after cooking rather than during. The purple flowers are edible and used as a garnish. Chives lose most of their character when dried, so the fresh product is the one that matters.

Handling

Keep cold and at high humidity from harvest onward. Avoid compressing the stalks in the carton.
