Thymus vulgaris
Thyme is a low-growing woody perennial, harvested as sprigs. Like rosemary it is a hard herb and handles transport and storage better than soft leaf herbs.
Culinary use
Warm, slightly earthy aroma. A standard component of bouquet garni and herbes de Provence, used in stocks, braises, roasts and stews and with poultry and vegetables. Holds its character through long cooking.
Handling
Keep cold and dry. Sprigs are cut to a consistent length before packing.
