Ocimum basilicum var. purpurascens
Red basil is a purple-leaved basil of the same species as green basil, grown for colour as much as for aroma. Ours is grown on our farm near Hawassa and harvested by hand.
Culinary use
Slightly more clove-like and less sweet than green basil. Used where the colour is part of the dish — salads, garnishes, infused oils and vinegars — and in Thai cooking. As with green basil the aroma is heat-sensitive, so it is added at the end.
Handling
Like all basil it suffers chilling injury below roughly 10 °C and must never travel in the same pallet as herbs held at 0 °C. Keep the leaves dry and out of direct airflow.
