Eruca vesicaria subsp. sativa
Rocket, also sold as arugula, is a fast-growing leafy annual of the brassica family, grown for its peppery leaves. Ours is grown on our farm near Hawassa in southern Ethiopia and cut by hand.
Culinary use
Peppery and slightly bitter, eaten raw rather than cooked. Used in salads and grain bowls, scattered on pizza and pasta after cooking, served with cured meats and shaved hard cheese, and blitzed into pesto as an alternative to basil.
Handling
A leaf salad rather than a woody herb. Keep cold at 0 °C and at high humidity. The leaves yellow quickly if the cold chain is interrupted and bruise under compression, so cartons should not be packed tight.
