Mentha spp.
Mint is a perennial herb grown for its aromatic leaves. The species matters commercially: spearmint (Mentha spicata) is the standard for tea and Middle Eastern cooking, while peppermint (Mentha × piperita) carries a higher menthol content and is used in beverages and confectionery. Culinary use
Used fresh in teas, in salads such as tabbouleh and fattoush, in yoghurt-based sauces, with lamb, and in cocktails and desserts. Middle Eastern and North African cuisines use it in volume; British cooking pairs it with lamb.
Handling
Keep cold and at high humidity. Mint leaves darken quickly if the cold chain is interrupted, so transit temperature matters more than it does for the woody herbs.
