Salvia officinalis
Sage is a woody perennial of the mint family with soft, grey-green leaves. Ours is grown on our farm near Hawassa in southern Ethiopia and cut by hand.
Culinary use
Warm, slightly peppery and resinous. Used with pork and poultry, in saltimbocca and stuffings, fried in butter for pasta and gnocchi, and in sausage seasoning. Robust enough for cooking, unlike the soft leaf herbs.
Handling
A hard herb. Keep cold at 0 °C and dry. The leaves bruise easily, so the bunches should not be compressed in the carton.
