Salvia rosmarinus (formerly Rosmarinus officinalis)
Rosemary is an evergreen woody shrub, harvested as sprigs. Because the stems are woody, rosemary travels and stores better than soft leaf herbs — one of the more forgiving lines in air-freighted fresh herbs.
Culinary use
Strong, resinous, pine-like aroma. Used with roast lamb, poultry, potatoes and root vegetables, in focaccia and in infused oils. Robust enough for long cooking, unlike the soft herbs.
Handling
Keep cold and dry. Sprigs are cut to a consistent length before packing.
